Erythritol is a crystalline polyol sweetener that provides approximately 70% of sucrose’s sweetness. Because it has a clean taste and comes as a white granulated powder, it works well in reduced-sugar formulations when the buyer needs both sweetness and bulk—not just the much higher sweetness intensity offered by stevia or sucralose alone.
This grade is specified at 99.5–100.5% assay on a dry basis. Its particle size is 30–60 mesh, and it melts within the 119–123°C range. That defined crystal size matters for dry-blend flow, the texture of tabletop sweeteners, and confectionery processing; the melting range, meanwhile, helps formulators judge whether it is suitable for applications exposed to heat.
The specification also sets limits of ≤0.3% for reducing sugars, ≤0.1% for ribitol and glycerol, ≤0.2% for moisture, and ≤0.1% for residue on ignition. Together, these requirements distinguish a food-grade erythritol purchase specification from an unspecified polyol powder while supporting consistent taste, appearance and handling.
