Taurine differs structurally from the amino acids that form proteins. Instead of a carboxylic acid group, it has a sulfonic acid group, and it is not incorporated into proteins. As a result, its role in functional nutrition, beverage, and feed formulations is distinct: it is chosen for its high water compatibility, not as an amino acid used to build proteins.

For clear beverages, energy-drink premixes, and powdered nutrition blends, Taurine is valued for its white crystalline appearance, low moisture specification (≤0.20%), controlled pH range of 4.1–5.6, and 99.0–101.0% assay. BCAA ingredients are generally used to supply branched-chain amino acids, while Taurine is selected when a formulation calls for an amino-sulfonic acid ingredient with a different functional position and good dissolution characteristics. Its specified limits for chloride, sulphate, iron, and heavy metals also help support cleaner finished-product profiles in quality-sensitive nutrition and feed applications.
