Trisodium Citrate Dihydrate is citric acid’s alkaline sodium salt. Citric acid increases acidity, whereas this E331(iii) ingredient helps keep formulations near neutral or mildly alkaline; a 5% aqueous solution has a pH of 7.6–9.0. It is therefore useful in formulas that require acidity control without a pronounced sour taste.
The dihydrate form is defined by a controlled water content of 10.0–13.0% and an assay of 99.0–100.5%. Buyers can choose among several particle-size options, ranging from coarse 8–40 mesh to fine grades below 60 mesh, depending on the flow, dissolution, and blending characteristics required for production. Common uses include beverage buffering, processed-cheese emulsification, dairy stabilization, seasoning, and effervescent tablet systems.
